I can't really figure out how this works! But its the first day of Summer Vacation and I'm FREE!!!! Maybe this summer I'll figure it out! For starters, I made the BEST salad for lunch today and since I'm always trying new recipes when I have time (translated during the summer) I thought I'd share this one. I hope someone out there will enjoy it too!
Taco Salad
1/2-1 lbs ground beef
1 envelope taco seasoning, divided
1 head of iceberg lettuce
1/2 pkg 12.5 oz Doritos
1 pint grape tomatoes, halved
1 16 oz can kidney beans, drained
2 cans sliced olives, drained
1 c shredded cheddar cheese
1/2 large sweet onion, chopped
1 4 oz can chopped green chilies
3/4 c Thousand Island salad dressing
2/3 c salsa
2 T sugar
Cook hamburger with taco seasoning, reserving 1 tablespoon for dressing.In a large bowl combine all ingredients, but the last three.In a small bowl combine the salad dressing, salsa, sugar, and reserved taco seasoning. Pour over salad and toss to coat. Serve immediately.
*I used Splenda, would suggest more lettuce, and let everyone add their own chips when its served. I also used black beans instead, either would work. Enjoy!
